Caramel Stuffed Whole Wheat Vanilla Pancakes

There are only a few things in my life that I will repeatedly return to. Among those: my favorite restaurants, my favorite people, and one of my all-time favorite sweets, caramels. If you follow me on social media, you're highly familiar with my love for caramel macchiatos, and somedays even get my suggested daily calorie intake from them alone. It's kind of sick. To me, though, caramel is just one of those sweets that quenches any sweet tooth that I might be experiencing, literally melting in my mouth and making all of my dreams come true.

How dramatic is that?

Because the universe is pretty friendly, I got word about an event taking place literally steps from my apartment in honor of National Caramel Day. Starting at 7AM on April 5, Werther's Caramels will be giving out FREE CARAMEL to folks in Time Square. Free caramel! You'll be able to BYOB (not booze, but, bring your own bowl, although I'm not against having a mimosa before or after) to fill up with the good stuff, and get your dose of caramel for like, a million days thereafter. 

I, however, have #adultlife things to do while this event is taking place, so I'm unable to attend. If you're also unable to attend because you live across the country or something super inconvenient like that, you'll be able to get in on the fun by heading over to Werther's Facebook page

However, just because I can't attend, that wasn't going to stop me from enjoying one of this years greatest holidays. I woke up the other morning and desperately needed some pancakes, and also had a box of Werther's Caramels newest soft caramels staring at me. The logical thing to do? Stuff some pancakes with said Werther's Caramels.

They turned out incredible, and I'm sharing the recipe with you today. Allow these to assault your face for National Caramel Day, and I promise you won't regret it.

 Yields 8-10 pancakes

1 1/2 cups whole what flour
3 1/2 tsp baking powder
2 tsp vanilla extract
1 egg
1 1/4 cups whole milk
3 tbsp melted butter
8-10 Werther's Soft Caramels (1 per pancake)
+ an additional 10 soft caramels for melting

Sift the whole flour and the baking power together into a bowl. Make a well in the middle, and crack in your egg. Combined butter, milk, and vanilla extract. Whisk dry ingredients into wet ingredients. Pour some of the batter into a greased, hot skillet, and top with a flattened piece of Werther's Soft Caramels. Cover the candy with additional batter. Cook pancakes on the first side until you see bubbles forming around the edge. Flip, and cook until golden brown.

While pancakes are cooling, add 10 Werther's Soft Caramels to a microwave safe dish and melt in 30 second intervals until smooth. Drizzle on top of pancakes and enjoy!
