Okaaaay. I promise this is the last time we talk about quinoa for a while. At least until next week. And that's really only because I don't post anything new over the weekends. HAHAHA I kid I kid. But no really, I promise to give you a few days off from the hard stuff.
For the next installment of Melissa has an addiction to quinoa, I present to you this grilled chicken sesame stir-fry quinoa bowl. It's basically all I can think about since I made it the other day, and I now I need to implant it into your brain so you also can't focus on normal things.
Also, the weather has been super sh*tty here in the big apple the last couple of days, so I needed something light and bright to remind me that things are going to be okay. I presume that for normal people that would be something like cakes or cookies, but here at Food and the City we do things backwards.

Grilled Chicken Sesame Stir-fry Quinoa Bowl
makes 1 bowl
1/2 cup quinoa
1 cup water
1/2 cup cooked grilled chicken, diced
1 1/2 tablespoons sesame oil
1 cup assortment of stir-fry veggies (I always use a frozen pack from Trader Joe's that includes broccoli, snap peas, water chestnuts, carrots, and mushrooms)
1/2 red bell pepper, sliced into rings
1 tablespoon sesame seeds
Combined both quinoa and water in a rice cooker and set to cook. Instructions here. When the quinoa is done, fluff with a fork and set aside.
Heat your sesame oil up in a skillet set to medium-high heat. When it starts to pop, add in your sliced bell pepper and allow to cook until tender, about 5 minutes. Add in the rest of your stir-fry veggies, as well as your grilled chicken, and allow for them to heat through. If you opted to use fresh vegetables, adjust your timing needing to cook them to completion. I like to use the frozen stuff since A) you're essentially just heating them through, and B) they are juuuust as good. Toss everything together to coat in the sesame oil, then sprinkle on your sesame seeds.
Transfer the quinoa, veggies, and chicken to a serving bowl and garnish with additional seeds if you'd like. Now take a picture and post it to Instagram using the hashtag #FitLife. Just kidding, enjoy!
