If you could choose just one thing to eat for the rest of your life, what would it be? Would it be something sweet, like cupcakes, or something soul-less like kale?
If someone came up to me tomorrow and gave me 5 seconds to decide, it would hands-down, no questions asked, be pizza. I don't think a day has gone by that pizza didn't invade my though process, even if just for a few seconds.
And those few seconds are the best part of my day.
Spicy Chicken Tomato & Pepper Pizza
1lb pizza dough (I used a whole wheat batch from Whole Foods.)
1 cup mozzarella cheese
1large chicken breast, fully cooked and cubed or shredded
1-2 chili peppers, depending on your spice tolerance, diced
1 yellow bell pepper (it doesn't have to be a yellow one, but yellow is pretty.)
basil for garnish
Preheat your oven to 425. Roll out your pizza dough onto a greased baking sheet or pizza stone. Top the dough with the mozzarella cheese, followed by the chicken, peppers, and tomatoes. Bake in the oven for 15-20 minutes, or until cheese is melted and crust is browned.
Garnish with fresh basil ribbons and enjoy!
