Sometime you just need some spice in your life. Not necessarily spicing up a love life, or even your living room pillows. We're talking spicing up your food. Combining flavors that explode the second they hit your taste buds, and dance a jig of happiness in your mouth.
It's no secret that we're big grilled chicken fans over here, and that we are firm believers that it doesn't have to be boring. There are so many ways to dress up simple grilled chicken, and this is just one of our many favorite ways.
Smother some plain ol' grilled chicken breasts in peppers and veggies tonight!
Grilled Chicken with Cilantro Salsa Salad
makes 3 chicken breasts
3 whole boneless, skinless chicken breasts
2 tablespoons olive oil
1/2 tablespoon garlic powder
1/2 tablespoon dried cilantro
for the cilantro salsa salad
1/2 cup fresh cilantro
1/2 cup cherry tomatoes, sliced
1 small red onion (or 1/2 of a medium one), diced
2 jalapenos, diced
1 tablespoon olive oil
1 tablespoon lemon juice
Add chicken breasts to shallow dish and pour on 2 tablespoons of olive oil, plus the garlic powder and dried cilantro. Toss everything to coat and allow chicken to marinate for an hour.
Preheat your grill pan on a medium-high flame, and give it a good spritz of cooking spray. Grill chicken breasts for 4-5 minutes on each side, or until chicken is cooked through and no longer pink in the center. Transfer for serving dish and allow to rest for 5 minutes. While chicken is resting, combined all of the ingredients for the cilantro salsa, and top each chicken breast with a heaping of it.
Adjust your salt/pepper ratio as needed. Enjoy!
