Easy Vegetable Chow Mein

Vegetable Chow Mein is one of my favorite dishes to order at a Chinese restaurant. Call me a simple gal, but all it really takes are some veggies and some noodles to put a smile on this face. I'm kind of addicted to stir-fried things, okay? Don't judge me.

With bikini season quickly approaching (who are we kidding, it's pretty much here.), we here at Food and the City have been trying to cut out the take-out, and whip up some of our favorites at home. Enter: this vegetable chow mein. It tastes just as good as if it was from your favorite Chinese restaurant, however I'm definitely not claiming it to be authentic. In fact, it's probably the furthest thing from authentic. But it's good, so, that's okay, right?

Easy Vegetable Chow Mein

Serves 2
2 3oz packages of Ramen Noodles (or chow mein if you can find them!)
1/2 teaspoon Butter
2 cups Mixed Vegetables (we used a frozen pack consisting of broccoli, onions, water chestnuts, carrots & peppers.)

For the sauce:
1/2 cup Soy Sauce
1/4 cup Water
1 teaspoon Brown Sugar
1/2 teaspoon Garlic Powder
1/2 teaspoon Crushed Red Pepper Flakes
1/2 teaspoon Cayenne Powder

Bring a pot of water to a boil and cook your noodles according to the package. Drain, toss with butter to prevent sticking, and set aside. Prepare your vegetables as needed. Since we used a frozen pack, this just required 5 minutes in the microwave.

Combined all of the ingredients for your sauce and whisk until sugar is dissolved. Bring a saucepan up to medium heat, and throw in your noodles. Leave undisturbed for 2-3 minutes to allow them to start crisping. Add in your cooked vegetables then pour in your sauce. Toss everything to coat and allow to fry up for another 2-3 minutes. The rest of the cooking time will depend on how thick you like your sauce, or how crisp you like your noodles. Just keep an eye on it until you've reached your preference.

Remove from heat, split into two servings, and enjoy!
