Did we already have you at the word cheese? Or maybe we had you at the words spaghetti carbonara? Aka one of the easiest, traditional Italian dishes to whip up?


Back in the day we used to call this the "bacon and egg" pasta dish. Breakfast pasta perhaps? Sure.. lets go with that.

1lb spaghetti pasta
1/2lb bacon
1 medium sized onion, chopped
1 tablespoon olive oil
1/2 cup parmesan cheese
1/2 pecorino cheese
6 eggs
1/2 cup milk
1 teaspoon black pepper

Boil a pot of water on medium-high and cook your pasta according to the package. While pasta is cooking, whisk together your eggs, milk, parmesan cheese, pecorino cheese and black pepper. Set aside. Heat a skillet on medium, and cook your bacon until fully cooked. Remove and set aside on a paper towel lined plate. Add your onion to the same skillet and cook in bacon grease until translucent, about 5-6 minutes.

When pasta has reached al dente, drain and then immediately return to hot pot. Quickly add in your egg mixture while continuously tossing pasta to coat it. The heat of the pasta will cook the egg in your sauce.

When pasta is coated, add in your onion and bacon and top with additional cheese if preferred.
