tortilla pizza is by far one of my favorite things to eat when I'm trying to go easy on the carbs. if you know anything about me and this messy little blog, its that my heart is basically made out of pizza. i'm convinced i was a pizza pie in my past life.
with fashion week coming up, and me apparently being cool enough to attend some of the fabulous events, i've been giving good ol' pizza dough a break the past week and opting for tortillas instead.
this isn't really a diet food, but it works for my messed up brain.. okay?
tomato + arugula tortilla pizza
1 flour tortilla
half of a vine tomato, sliced
1/2 cup mozzarella cheese
1 bunch of arugula, roughly chopped
1/2 lemon, juiced
preheat your oven to 350.
grease a baking sheet or lay down foil. to your tortilla, add 1/2 the amount of cheese, tomato slices, and then the remaining cheese. bake for 10-12 minutes or until cheese is bubbly.
while pizza is cooling, chop your arugula and squeeze on your lemon juice. top tortilla pizza with arugula and enjoy!
