Margherita Pastry Pizza

Lets just rename this blog Pizza and the City, shall we? Um yea.. if you haven't noticed.. the majority of the recipes I post on here are of pizza, something about pizza, a picture of a pizza, or me mentioning pizza of some kind. I'm very, very sorry for your thighs.

Pastry pizza? Yes. I made it on a whim the other day when I had some left over puff pastry dough for this recipe. I was really wanting pizza in my face, per my usual Tuesday, and just rrrreally didn't want to start rolling out dough in the 90 degree weather we were experiencing. New York, get it together PLEASE.

Also, I had some fresh cherry tomatoes in the fridge practically begging me to use on a pizza, so you know.. I aim to please.

Just smack me in the face this is so good. It lasted all of 4 seconds. Cheesy, tomato-y, pastry goodness.

Margherita Pastry Pizza

1 sheet of puff pastry
10 cherry tomatoes
1/2 cup mozzarella cheese
fresh basil for garnish

*If frozen, thaw out your puff pastry sheet for 30-40 minutes by setting it flat on a table in a room temperature space.

Preheat your oven to 400.
Lay out your puff pastry on a greased baking sheet and top with half of your mozzarella cheese. Slice your cherry tomatoes in half and evenly spread them out on top of the cheese. Sprinkle on reaming mozzarella, and bake in the oven for 10-12 minutes.

Garnish with fresh basil and enjoy!
