Basic roasted vegetables + I'm excited for summer.



Its basically summer and I don't care what the calendar has to say about it. So what there is technically still a couple of weeks left of spring? So what? I'm declaring it an early start to summer here in NYC.

Its hot. Like, really hot. 


Here at the Food and the City household we have been doing some saaaarious summer prep. Grilling like crazy, officially starting our fourth of july party planning (SO EXCITED), and testing out different bottles of wine to find the perfect one for some summer sangria. I promise, we are only drinking it in the name of precaution. Such a hard, hard job.

Lolz.


Beef Franks. Mr. D is officially obsessed with beef franks. He kind of sort of got his mom addicted to them too, and now this is basically all he does when he is home. Grills Hebrew National Beef Franks.

I think they are replacing me.


His other new favorite thing? Roasted vegetables to go with his beef franks. I know right? Mr. D liking something healthy? I'm sort of worried about him, however, I'm not complaining.

I love me some roasted veggies. They are probably the easiest thing that will ever go inside your oven.



mmmmmm These were so good, I already have them on my list of things to make for our Fourth of July party as a yummy summer side dish. Healthy, yet tasty. Two things I very much like to go together.



Oh and p.s, guess what I figured out the other day? Roasted vegetables are probably the ugliest food to photograph. Please bare with the ugliness.


Basic Roasted Vegetables

No specific measurements for this recipe, but I used:
1 Zucchini 
1 Purple Onion 
1 Potato 
1/2 of a 8oz package of Chopped Mushrooms
1/2 of a 12 oz package of fresh Broccoli Florets
3 T Olive Oil
1/4 T Kosher Salt

Preheat oven to 400.
Wash and dry all of your vegetables. Cut them up in any desired shape and add them to a greased baking sheet. Drizzle on your olive oil and sprinkle on your kosher salt. Toss everything together to coat.

Roast in the oven for 40-45 minutes. Enjoy!
