Simple Fried Rice

Remember when I told you that Sesame Noodles were my favorite thing to eat, ever?

Well I lied. This is my favorite thing to eat ever. Like ever ever. As in forever. And ever. Um, why is fried rice so good? Why is it that I can't be totally in love with eating air for dinner as much as I am in love with carbs? In a perfect world my daily food consumption would strictly include pasta, potatoes, and rice. With a stick of butter to go on all 3 of them.

And just like I said I take noodles serious, I really, really take fried rice serious. Especially this fried rice. And that is so funny because up until recently I couldn't make good fried rice at home for the life of me. Did you know its the egg that completely gives fried rice the flavor that it has? I had no idea of this until one day I was like "OH I should probably put an egg in it", and well... the rest is history.

Just like my brain.

What I'm really trying to say here is that today is your day to make Fried Rice.

Simple Fried Rice

Serves 2
3 cups Brown Rice (I REALLY enjoy this with white rice, but I only had brown on hand)
1 tablespoon Sesame Oil
1 Onion, diced
1 Carrot, shredded 
2 Garlic Cloves, minced 
2 Eggs
1 Green Onion, diced
3 tablespoons Soy Sauce

Cook your rice according to the package. Set aside. (Using leftover rice is always a plus)
In a skillet heat up your sesame oil on medium heat. Add in your garlic, onion, and shredded carrot. Cook for 3-4 minutes, or until vegetables are tender. Crack in 2 eggs and immediately scramble. Add in your cooked rice, soy sauce, and green onion. Mix to combined.
