Parsley Peanut Pesto



GUYS I got a food processor.

And basically now I know I'm getting old. Oh, why? Because you have NO idea how excited I am to have a food processor and be able to create the oddest creations possible and then post them on here. You really have no idea.

And of courrrrrse the first I had to make was pesto, because well, I think it should be written in the bible that when thy gets a food processor thy must make pesto. But you know me and you know I'm such a weirdo so obviously I couldn't make regular pesto. Whhhhhy on pesto earth would I want to do that?


Seriously, this is so good I might even forget all about regular pesto and just make this from now on. Until I don't and then you know how that one goes already.


Parsley Peanut Pesto

3 cups Thick Spaghetti 
1 1/2 cups Parsley 
1/2 cup Peanuts
1/2 cup Olive Oil
2 whole Garlic cloves
Juice from 1/2 a lemon

Bring a pot of water to a boil to cook your pasta. Cook until al dente, drain and set aside.

In your food processor, add in your parsley, peanuts, garlic, half of the amount of olive oil and pulse to combined. Scrape down the sides and add in the rest of your oil and lemon juice. Pulse a few more times until well combined.

Add to your cooked spaghetti and toss to coat. Enjoy!
