Lets talk about Mac N' Cheese.
And how Mr. D used to absolutely hate mac n' cheese until I fed him this one day, and now all bets are off. As in, I make this once a week. As in, I can prepare this with my eye closed and I can't believe I waited so long to share it with you all.
I'm a terrible blogger, seriously. Please stop reading this. Wait come back I miss you.
OH and lets also talk about how I keep pretending its spring and wearing spring colors and being totally obnoxious. Like, who wears a sleeveless coral colored dress with bows on it in the winter? I do. Thats who. Total idiot I know, but I just.can't.wait. And the funnnny thing is is that once its here, I'll throw a huge tantrum and wish it was winter again. I am forever a 5 year old.
Speaking of me being a forever 5 year old, I spent 45 minutes on this site yesterday. I don't think I need to explain my reasoning for that one.
So since this post is over, I guess I'll actually talk about Mac N' Cheese now. Its delicious, and how could you say no to a lighter version of Americas favorite gross cafeteria food?
Lighter Mac N' Cheese
1/2 lb Pasta (traditionally made with elbow macaronis, but of course I'm annoying and used gemelli's)
3 1/2 cups Shredded Cheddar Cheese
2 cups Saltine Crackers, crushed
3 tablespoons melted butter
1 tablespoon unmelted butter
1/2 cup Milk
1/4 tablespoons of salt, pepper, and red pepper flakes
Preheat oven to 350.
Boil and pot of water to cook your pasta and grease a standard sized baking dish. Cook until al dente, drain and set aside. In a bowl combined crushed saltine crackers, 1/2 the amount of cheese, and melted butter. Mix to combined, then add half of the amount to the bottom of your baking dish.
Add cooked pasta to a separate bowl, and add in the rest of your cheese as well as your unmelted butter. Mix to combined, then crack in your egg and add in your milk, salt, pepper and red pepper flakes. Give it a good mix to make sure everything is evenly coated. Add it all to your baking dish and top off with your remaining cracker mixture. Lightly spray the top with cooking spray and bake in the oven for 25 minutes.
Allow to cool for 5 minutes, then slice up and serve!
