Brown Butter & Basil Penne


Today called for pasta.

Not that I'd need an excuse, or anything. Pasta for president! No but really. Its a snow storm outside and pasta is just one of those comfort foods for me that make me feel cozy inside. Maybe its all the carbs I'm feeling, Idunno, buuuut snow = pasta over here.

 
And obviously, since you know what blog you're reading, I had to use an obscene amount of butter. Brown butter to be exact. And I'm tottttttally not wanting to tell you that I picked up a tub of that Smart Balance butter the other day, and well, thats what I used to brown. 

I know, I know, I know. I'm starting to lose my reputation around here. It was an epiphany at the grocery store I tell you. I was hugging my tub of Land O'Lakes butter when Mr. D turned to me and said "Lets try this low fat light stuff instead". I felt dizzy and I think the floor fell from under me. I almost forgot where I was and had to check my ID to remember my name. Why would we want to do that? Low fat butter? Just.. why? I'm not eating butter to be healthy. Like nobody read 50 Shades of Grey for the great literature.

Aaaaand in true Mel fashion, I put up a fight and lost.

So yea, now I have 3 tubs of Smart Balance in my fridge.. and actually... it was really good. Yea... I know. I am so sorry I betrayed you like that. It will never happen again.

Long story short, if you're stuck at home this weekend due to snow, make brown butter pasta. Its the answer to everything. Oh and throw some basil in there, too.


Brown Butter & Basil Penne

Serves 4-5:
1 lb bag of Pasta (I used penne, but feel free to use whatevz)
1 Stick of butter
1/2 t Salt
1/2 t Black Pepper
1 t Brown Sugar
7-8 Fresh Basil Leaves

Boil a pot of water to cook your pasta. Cook until al dente, drain and set aside. 

Melt a stick of butter in a skillet on medium heat. Add in your brown sugar, salt and pepper. Let brown for 7-8 minutes, whisking occasionally. Add in basil leaves and allow to heat up for about a minute. Mix up.

Transfer pasta to a serving plate and pour brown butter basil sauce on top. Toss to coat.
