Roasted Tomato Spinach Pizza



I think I eat pizza too much.
Lolz. Totally kidding. I want pizza in my face every moment I breathe. Which is pretty much all the time. Can I breathe pizza? That would be great. Le sigh.

So remember when we roasted tomatoes? Yup we're going to do that again. Why? Because I am so predictable and so boring and so repetitive that if I start to like something, I beat the living crap out of it with love and its just so, so annoying. I've been making roasted tomatoes as a snack like, at least 3 times a week now and am just so utterly addicted I'm surprised Mr. D hasn't moved out yet.

But that would mean more closet space, right?

And so yea. Every pizza recipe I post on here is always basically exactly.the.same, but lets say its just another pizza.. idea? Yea.


Roasted Tomato Spinach Pizza

1lb Pizza Dough (freshly made or frozen)
1 cup Mozzarella Cheese
1 cup Marinara Sauce 
10-15 Roasted Tomatoes 
1/2 cup Baby Spinach Leaves
Salt, Pepper, and Garlic Powder for seasoning

Preheat your oven to 400.
Roast your tomatoes. Directions here. Roll out your pizza dough and evenly spread on your marinara sauce, then mozzarella cheese. Top with roasted tomatoes and spinach leaves. Sprinkle on salt, pepper, and garlic powder for extra flavor.

Bake for 15-20 minutes, or until crust is brown and cheese is bubbly. Slice and serve!
