My favorite salad.

OK before you leave just hear me out.
I know what you're thinking. Really, Mel? REALLY? A salad? Who are you? I know. I'm totally losing my reputation here by throwing a salad at you especially during the holidays BUT JUST HEAR ME OUT! 

So, I don't do salad. Well I do. Sort of. But not really. Like ever? Except from Apple Bees. And if I make it from home and have full control of the no ingredients that go in it. No really. I HATE SALAD. And yet I'll only eat it when its SO simple and there is, like, NOTHING IN IT to make it not taste like salad because I am a total freak and for some reason I prefer it this way probably to just hate myself more and wonder whhhhhy I make these weird decisions and wonder why people even eat salad in the first place.

UGH. You think I'm crazy but this is total progress for me. Same time yesterday last year I was sticking my tongue out at salad and telling everyone they were weird for eating leaves and then ordering my second slice of pizza.

But really, this salad that I make at home is SO GOOD. SO SIMPLE. SO AMAZING. SO LIFE CHANGING. SO PERFECT. SO ELIGIBLE TO BE PRESIDENT.

And that up there ^ - The only way this whole salad thing could work out for me. Thai Peanut sauce. And no I don't make my own. I tried once and had to throw out my pan because I burnt peanut butter so.bad there was literally a fog of brown throughout the house for like 7 hours. No joke.

So yea, Annie Chun gets it done for me and I'm fine with that.
I like to buy these bags of ready to use Spinach because it is just so.much.more convenient during the day with what in between self loathing and commercials during catfish, I really just couldn't be bothered. Oh and you probably already have all of this stuff (besides the peanut sauce unless you're a freak like me and have 7 (seriously) backup bottles of it in your pantry).

Lemon Juice, Green Onions, Spinach, Crushed Peanuts, and Peanut Sauce.
Toss is all together.

Kill.Me.Now.


Oh and p.s you could totally use romaine lettuce, iceberg lettuce, arugula, whatever makes your skirt fly up. I just much more prefer spinach because Popeye traumatized me as I child and I still feel like I HAVE to eat it all the time.


So yea, this is my favorite salad. I have no idea what to call it.
Is it a thai peanut salad? Is it a spinach salad? Is it the lazy girl salad?

Who knows.
