Broccoli rabe, is like, really good. And its, like, super easy to make. And like, I love it.
Oh boy. Do you like broccoli rabe? A lot of people don't. I mean, I won't judge you or anything. But do you? I need to know before we become friends. In which case I don't befriend people who dislike broccoli rabe. I'm just kidding of course. Well not really.
Broccoli rabe, or rapini if you're super fancy, is one of the easiest sides to prepare and can be paired with just about anything. Side it with a meat, in some pasta, or throw it on some pizza. Or I guess you could eat it by itself if you're on that thing some people like to call a diet. I don't know what that word means.
Heat up some oil in a skillet. Throw in some minced/pressed garlic and stir for 30 seconds.
Toss in your broccoli rabe (it will sizzle!) and coat all the leaves with the oil/garlic.
Your rabe will start to wilt immediately. Add in some red pepper flakes, squeeze on some lemon and cook for about 5 minutes.
Wasn't that easy?
